Have you ever heard of Baba Ganoush? It’s basically hummus made with eggplant instead of chickpeas. Yum!
Ingredients
- 1 large eggplant
- 3 tbsp olive oil
- 3 tbsp unhulled tahini
- 1 garlic clove
- 1 tsp ground cumin
- Juice of 1 lemon
- Salt & pepper
- 1/8 tsp cayenne pepper
- 1 tbsp chopped parsley
Method
- Prick the eggplant with a fork and roast in the oven at 200°C for 35 minutes
- Remove and blend without removing the skin (where the majority of the nutrients are) with all the other ingredients.
Enjoy with veggie sticks such as carrots, celery, cucumber, capsicum, snow peas, green beans or broccoli and cauliflower florets.
