• 1 1/2 cups wholemeal flour*
  • 1/3 cup brown sugar
  • 1 tsp bicarbonate of soda
  • 1 tsp baking powder (make sure it is gluten-free if required)
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp salt
  • 2 finely grated carrots
  • 3/4 cup finely grated apple or 1/2 cup applesauce
  • 1/2 cup chopped dates
  • 3/4 cup soy milk (or any milk alternative with at least 300mg calcium per 250mL)
  • 1/2 cup oil
  • 2 tsp vanilla essence
  • 1 tbsp vinegar
  • 1/2 cup walnuts (optional)

*Use a flour which says “100% wholemeal flour” in the ingredients.  This recipe will also work well for those who require gluten-free (in which case, use gluten-free flour instead of wholemeal).

Method:

  1. Preheat the oven to 175 degrees C.
  2. Mix the dry ingredients.
  3. Add grated carrots, apple and dates.
  4. Add wet ingredients and walnuts. Mix thoroughly.
  5. Bake for about 35 minutes, or until a skewer comes out clean.

Sprinkle with icing sugar or drizzle with chocolate if you like a sweet punch.
