- 1 1/2 cups wholemeal flour*
- 1/3 cup brown sugar
- 1 tsp bicarbonate of soda
- 1 tsp baking powder (make sure it is gluten-free if required)
- 1 1/2 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp salt
- 2 finely grated carrots
- 3/4 cup finely grated apple or 1/2 cup applesauce
- 1/2 cup chopped dates
- 3/4 cup soy milk (or any milk alternative with at least 300mg calcium per 250mL)
- 1/2 cup oil
- 2 tsp vanilla essence
- 1 tbsp vinegar
- 1/2 cup walnuts (optional)
*Use a flour which says “100% wholemeal flour” in the ingredients. This recipe will also work well for those who require gluten-free (in which case, use gluten-free flour instead of wholemeal).
Method:
- Preheat the oven to 175 degrees C.
- Mix the dry ingredients.
- Add grated carrots, apple and dates.
- Add wet ingredients and walnuts. Mix thoroughly.
- Bake for about 35 minutes, or until a skewer comes out clean.
Sprinkle with icing sugar or drizzle with chocolate if you like a sweet punch.
