Pesto recipe with… whatever greens you’ve got

Pesto is a great way to get your daily greens and healthy oils.

Did you know that increasing your intake of healthy oils can decrease your unwanted cholesterol? It’s PESTO TIME!!

Ingredients

  • 8 cups of greens – I used radish tops because they are Roasted Nutsedible but prickly, so they go very nicely blended up
  • 2 garlic cloves/ 2 tsp minced garlic
  • 1/2-1 cup basil leaves & stalks – the more the better!
  • 3/4 cup roasted nuts/seeds
  • 3/4 cup olive oil
  • 2 tablespoons of lemon juice
  • 1 cup freshly grated parmesan cheese
  • A couple of grinds salt & pepper

 

MethodBlended Pesto

  1. Toss the garlic, greens, basil, nuts/seeds, oil and lemon juice in a food processor and pulse until finely chopped.
  2. Stir in the cheese
  3. Season with salt & pepper

Add to pasta, pizza or salad sandwiches or spread onto bread to dunk into soup.
