Carrot Greens Chimichurri

1 month ago, I hadn’t heard of Chimichurri.  Then I grew carrots and the rest is history!

Ingredients:

Carrot Greens

  • Green tops from 1-2 carrots & radishes (about 1 cup)
  • 1/2 red onion
  • 2 teaspoons oregano
  • 1/2 teaspoon cumin
  • 1 teaspoon ground sweet paprika
  • 1 garlic clove (fresh or minced)
  • 1 teaspoon salt
  • Pepper to taste
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil

Method:

  1. Wash your greens very thoroughly and finely chop with the red onion (a blender is great for this)!
  2. Mix in all the other ingredients.
  3. Bottle in a sterilised bottle (boiled) or freeze in small batches in containers.

Great added to pizza, zucchini slice or as a dipper for fresh or roasted vegetables!
